originated from nasa space food program in the 1960s and promoted by the un food and agriculture organization (fao), the world health organization (who) and the us food and drug administration (fda), haccp is widely recognized and accepted by the world as a food safety guarantee system. it has been enforced and accepted in many countries, and it is the prevailing standard of safe food production in the world.

haccp is a preventive system to analyze and control food safety hazards in the whole process of food supply chain, propose necessary precautionary and corrective measures and establish monitoring and verification procedures to eliminate and control food safety hazards and ensure food safety.

he haccp quality control law was the first control law developed by pillsbwg in the united states in 1973. it is a management system that ensures food safety. this management system generally consists of the following components:

●  analyze and evaluate the possible hazards from the procurement of raw materials to product processing and consumption.  

●  establish the critical control point of the whole process of food from raw material to final consumption (ccps) according to these analyses and assessments.

●  establish a program that can effectively monitor the critical control points.

the advantage of the system is to transfer the focus of security assurance from the traditional inspection of the final product to the control of the process and the quality of the raw materials, which can avoid huge losses caused by mass production of unqualified products.
